🍲 Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, ginger, celery, and the white parts of bok choy. Sauté 5–7 minutes until softened.

  3. Stir in turmeric, paprika, salt, and pepper. Cook 1 minute to bloom the spices.

  4. Add broccoli and zucchini; cook 2 minutes.

  5. Pour in broth until vegetables are covered. Bring to a boil, then reduce heat and simmer 15 minutes.

  6. Add bok choy greens and simmer 5 additional minutes.

  7. Blend until smooth (or leave slightly chunky if preferred).

  8. Adjust seasoning and add a squeeze of fresh lemon juice for brightness.
